{"id":981,"date":"2022-07-28T23:38:49","date_gmt":"2022-07-28T22:38:49","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=981"},"modified":"2022-07-28T23:38:49","modified_gmt":"2022-07-28T22:38:49","slug":"sourdough-focaccia-ii","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2022\/07\/28\/sourdough-focaccia-ii\/","title":{"rendered":"Sourdough Focaccia (II)"},"content":{"rendered":"\n<p>I tried some time ago sourdough focaccia but I wasnt really happy with the result and somehow found this <a href=\"https:\/\/www.youtube.com\/watch?v=pb-MvsRNgaM\">video<\/a> and decided to try again.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>320g water<\/li><li>100g sourdough starter<\/li><li>400g strong white flour<\/li><li>15g olive oil<\/li><li>8g salt<\/li><li>15g oil + 15g water<\/li><li>toppings: sliced onion, cherry tomatoes and slice green\/black olives<\/li><li>salt, pepper, herbs<\/li><\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Add the active starter to the water, mix well<\/li><li>Add flour and oil, mix a bit.<\/li><li>Add salt and mix well.<\/li><li>Cover it and let it rest for 30 minutes.<\/li><li>Make 1 fold<\/li><li>Cover and let it rest again for 30 minutes<\/li><li>Make 1 fold<\/li><li>Cover and let it rest for 2-3h.<\/li><li>Make a &#8220;coil&#8221; fold<\/li><li>Cover and let it rest in the fridge overnight (12-14h)<\/li><li>Take the dough out of the fridge. On a lightly dusted table top, shape the dough, trying to keep as much air inside (most difficult part for me)<\/li><li>Oil a pan and put the dough on it. Let is rise for 3h<\/li><li>Pre-heat oven at 230C<\/li><li>Mix oil + water.
