So I decided to do a paella with only veggies last weekend. I found this <a href=\"https:\/\/www.youtube.com\/watch?v=esqWsI396xY\" target=\"_blank\" rel=\"noreferrer noopener\">video<\/a> that I liked but at the end I went a bit wild as I stopped paying attention and I didnt have fresh artichokes.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 big leek (instead of artichokes) sliced<\/li>\n\n\n\n<li>5 garlic cloves (with skin)<\/li>\n\n\n\n<li>1 bunch of asparagus<\/li>\n\n\n\n<li>2 onions<\/li>\n\n\n\n<li>1 glass of white wine ( I used red)<\/li>\n\n\n\n<li>3 tomates grated<\/li>\n\n\n\n<li>paprika<\/li>\n\n\n\n<li>1 carrot diced<\/li>\n\n\n\n<li>1 red pepper + 1 green pepper<\/li>\n\n\n\n<li>1 courgette<\/li>\n\n\n\n<li>1 cauliflower<\/li>\n\n\n\n<li>1\/4 glass of soy (dark) sauce<\/li>\n\n\n\n<li>1 stock veg cube + 1 .5l boiling water<\/li>\n\n\n\n<li>1 cup of paella rice<\/li>\n<\/ul>\n\n\n\n<p>Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat up the paella dish, pour a gulp of olive oil once it is hot.<\/li>\n\n\n\n<li>Fried the garlic gloves a bit. Then add the asparagus. <\/li>\n\n\n\n<li>Once they are fried a bit, retire to a dish. <\/li>\n\n\n\n<li>Put the paella at low heat now.<\/li>\n\n\n\n<li>Fried the leek with the same oil in the paella dish. Till taking color.<\/li>\n\n\n\n<li>Then add the diced onions. Add salt and pepper. Stir all of them until taking some color.<\/li>\n\n\n\n<li>Add wine. Stir until it evaporates mostly.<\/li>\n\n\n\n<li>Add the tomate, mix well. Add paprika. Taste it!<\/li>\n\n\n\n<li>Add the carrot, peppers, courgette and cauliflower. Fry for a bit.<\/li>\n\n\n\n<li>Add the soy sauce. This will add quite a salty taste.<\/li>\n\n\n\n<li>Add the stock veg cube with the boiling water. Stirr all well.<\/li>\n\n\n\n<li>Add the fried garlic.<\/li>\n\n\n\n<li>After 3-5 minutes, add the rice. Spread the rice all around the dish.<\/li>\n\n\n\n<li>Dont stirr anymore. Increase the heat.<\/li>\n\n\n\n<li>Wait until the rice starts to come up on top.<\/li>\n\n\n\n<li>Try to move the paella dish so the water evaporates evenly.<\/li>\n\n\n\n<li>At the end you want a bit of a crust on the bottom (<a href=\"https:\/\/en.wiktionary.org\/wiki\/socarrat\">socarrat<\/a>!!!)<\/li>\n\n\n\n<li>Once it is ready, put the asparagus on top.<\/li>\n<\/ul>\n\n\n\n<p>In my case, as I used leeks, they can burn very easily but I was luck and it was just a bit.<\/p>\n\n\n\n<p>It looked nice from outside. I had a bit of socarrat. And tasted good!
