{"id":1957,"date":"2025-03-12T10:51:46","date_gmt":"2025-03-12T10:51:46","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=1957"},"modified":"2025-03-12T10:51:46","modified_gmt":"2025-03-12T10:51:46","slug":"eggplant-parm","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2025\/03\/12\/eggplant-parm\/","title":{"rendered":"Eggplant Parm"},"content":{"rendered":"\n<p>I watched this <a href=\"https:\/\/www.youtube.com\/watch?v=ex5PPHbdKdk\">video<\/a> and I had to try.<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 eggplants sliced<\/li>\n\n\n\n<li>flour for coating the eggplants<\/li>\n\n\n\n<li>salt, honey (optional)<\/li>\n\n\n\n<li>Sunflower oil for frying the eggplants<\/li>\n\n\n\n<li>700g good tomato passate<\/li>\n\n\n\n<li>3-4 garlic gloves chopped without core.<\/li>\n\n\n\n<li>fresh basil or dried oregano if you dont have it<\/li>\n\n\n\n<li>2 balls of mozarrella (or smoked mozarrela if you find it)<\/li>\n\n\n\n<li>Parmigiano<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Spread salt generously over the eggplants. Let is rest for 30 minutes. This is very important step to remove the acidiness. <\/li>\n\n\n\n<li>The eggplants should have sweat some water. Clean all the slices with water and dried them with a towel.<\/li>\n\n\n\n<li>In a sauce plan at medium heat, pour a glop of olive oil, when hot, add the garlic. Dont burnt it !!! Then add the tomato passate and basil\/oregano. Add salt\/pepper. Add a bit of honey, optional. Simmer for 30 minutes or so. Leave aside.<\/li>\n\n\n\n<li>Heat up a pan with some sunflower oil to deep fry the eggplants. The oil is ready with you put the tip of a wood spoon and fezzes.<\/li>\n\n\n\n<li>Pre-heat oven at 200C<\/li>\n\n\n\n<li>Coat slightly the eggplant slices with flour and deep fry until golden in both sides. 2-3 minutes each side. This is the most tedious part. But it is worth it. After removing form the pan, use kitchen paper to absorbe excess oil. <\/li>\n\n\n\n<li>In an oven dish (metal\/glass), pour a bit of the tomate sauce. Add a layer of eggplant, add slices of mozarella, add some basil\/oregano, grated parmigiano .
