And I noticed I didn&#8217;t have a recipe for that online. I used to follow the recipe from this <a href=\"https:\/\/www.amazon.co.uk\/Tapas-Revolution-Omar-Allibhoy-ebook\/dp\/B00DE15P9S\/\">book<\/a>, but honestly, it was never like the one my mum used to make when I was a kid.<\/p>\n\n\n\n<p>So I decided to find a video and try again as I don&#8217;t have the book with me. A decided for this <a href=\"https:\/\/www.youtube.com\/watch?v=CRlnsiX30o0\">one<\/a> as I liked her video about Tortas \ud83d\ude42<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 quince\/membrillo &#8211; 850g aprox after boiling<\/li>\n\n\n\n<li>500g sugar<\/li>\n\n\n\n<li>Juice from one lemon<\/li>\n\n\n\n<li>1 or 2 glass jars. Cleaned with boiling water<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Peel the quince, remove the core as it bitter. You will think that you are removing a lot but that is how it is. Chop in pieces<\/li>\n\n\n\n<li>Put the quince in a big pan\/pot. I don&#8217;t have express cooker. Cover in water and boil until it is soft. Use a knife, you should cut through the quince with ease.<\/li>\n\n\n\n<li>Drain the quince and weight it. Mine was 850g so I added 500g white granular sugar. Some other recipes add 1:1 quice\/sugar but I didnt want to add that much.<\/li>\n\n\n\n<li>Add the juice of one lemon<\/li>\n\n\n\n<li>With a hand mixer, make a pure .<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"602\" height=\"558\" src=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image.png\" alt=\"\" class=\"wp-image-1883\" style=\"width:331px;height:auto\" srcset=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image.png 602w, https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-300x278.png 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 984px) 61vw, (max-width: 1362px) 45vw, 600px\" \/><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Then starts the longest part. At low heat (use a glove!!!) start stirring the mix until it gets a dark orange color. Be sure it doesn&#8217;t stick! Keep in mind that it has a lot of sugar&#8230; and it is like molten lava when cooking! At the beginning the mix is white\/yellow-ish, I think after 1h, it started to change the color and it is when you have to be very alert and stir often (each minute) to avoid burning.<\/li>\n\n\n\n<li>When you use the wooden spoon to make a line and it doesn&#8217;t come together, it should be ready<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"663\" height=\"716\" src=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-1.png\" alt=\"\" class=\"wp-image-1884\" style=\"width:353px;height:auto\" srcset=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-1.png 663w, https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-1-278x300.png 278w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 984px) 61vw, (max-width: 1362px) 45vw, 600px\" \/><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Remove from heat and poor it in glass containers if possible, if not plastic.<\/li>\n\n\n\n<li>Let it cool down during the night at least.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"512\" height=\"795\" src=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-2.png\" alt=\"\" class=\"wp-image-1885\" style=\"width:305px;height:auto\" srcset=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-2.png 512w, https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2024\/11\/image-2-193x300.png 193w\" sizes=\"auto, (max-width: 512px) 85vw, 512px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>And this is the result from this morning.
