And to make it, quite expensive&#8230; So during a conversation, a friend of mine, mentioned &#8220;pollo en escabeche&#8221; as vey tasty dish with similar flavour to &#8220;atun en escabeche&#8221;. So I decided to give it a go and find a recipe. This <a href=\"https:\/\/www.youtube.com\/watch?v=aKJ-3gzUYkE\">one<\/a> looked very good.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400g chicken breast<\/li>\n\n\n\n<li>1 big onion sliced<\/li>\n\n\n\n<li>2 large carrots sliced<\/li>\n\n\n\n<li>3 cloves of garlic\n<ul class=\"wp-block-list\">\n<li>1 glass of white wine<\/li>\n\n\n\n<li>1 bay leaf<\/li>\n\n\n\n<li>15 pepper corns<\/li>\n\n\n\n<li>1 glass of vinegar (white wine, apple, etc)<\/li>\n\n\n\n<li>1 glass of water<\/li>\n\n\n\n<li>salt + pepper<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Salt and pepper the chicken breasts. <\/li>\n\n\n\n<li>Fry the chicken in a hot pan until golden outside. Put apart.<\/li>\n\n\n\n<li>In the same pan, add the onions, carrots and garlic. Fry until soften, aprox 4-5 minutes.<\/li>\n\n\n\n<li>Add glass of wine, bay leaf and pepper corns. Keep the high heat so the alcohol evaporates.<\/li>\n\n\n\n<li>Then add the glass of vinegar and water.<\/li>\n\n\n\n<li>Add the chicken back in.<\/li>\n\n\n\n<li>Cook at high heat for 15 minutes so the liquid evaporates a bit and the chicken absorbs some juice.<\/li>\n\n\n\n<li>Remove from the heat and pout the content of the pan into a glass dish.<\/li>\n<\/ul>\n\n\n\n<p>Ready to eat!<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/05\/image-9.png\" alt=\"\" class=\"wp-image-1271\" width=\"548\" height=\"619\" srcset=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/05\/image-9.png 604w, https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/05\/image-9-266x300.png 266w\" sizes=\"auto, (max-width: 548px) 85vw, 548px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>Very easy, quick and tasty!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I like a lot &#8220;atun en escabeche&#8221; but it is really difficult to find.
