{"id":1261,"date":"2023-05-04T23:14:25","date_gmt":"2023-05-04T22:14:25","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=1261"},"modified":"2023-05-04T23:14:25","modified_gmt":"2023-05-04T22:14:25","slug":"raspberry-bavarois","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2023\/05\/04\/raspberry-bavarois\/","title":{"rendered":"Raspberry Bavarois"},"content":{"rendered":"\n<p>Ingredients for glaze:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>75g raspeberry puree<\/li>\n\n\n\n<li>75g stock syrup (37g sugar + 37g water)<\/li>\n\n\n\n<li>2 leaves of gelatine<\/li>\n<\/ul>\n\n\n\n<p>Process for glaze:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Prepare the stock syrup. In a sauce pan, boil the water + sugar.  Remove from heat.<\/li>\n\n\n\n<li>Soak the gelatine leaves in cold water<\/li>\n\n\n\n<li>Heat up the stock syrup and add the softened gelatine. Mix well.<\/li>\n\n\n\n<li>Add the raspberry puree to the pan, whisk for 30sec, remove from heat and let it cool down.<\/li>\n\n\n\n<li>Pour the glaze into the base of the plastic moulds.<\/li>\n\n\n\n<li>Put in the fridge.<\/li>\n<\/ul>\n\n\n\n<p>Ingredients for bavarois cream filling:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>125g raspberry puree<\/li>\n\n\n\n<li>50ml milk<\/li>\n\n\n\n<li>2 egg yolks<\/li>\n\n\n\n<li>15g caster sugar<\/li>\n\n\n\n<li>1.5 gelatine leaves<\/li>\n\n\n\n<li>75ml double cream<\/li>\n<\/ul>\n\n\n\n<p>Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat lightly the raspberry and milk in a saucepan<\/li>\n\n\n\n<li>In a bowl, whisk the egg yolks and sugar<\/li>\n\n\n\n<li>Pour the boiling milk into the egg mix and whisk well.<\/li>\n\n\n\n<li>Return the mix to the heat and stir for a minute or less. Doesnt have to thicken up!<\/li>\n\n\n\n<li>Add the gelatine, mix well.<\/li>\n\n\n\n<li>Remove from heat and sieve the mix, leave it to cool down.<\/li>\n\n\n\n<li>Whisk the cream to soft picks<\/li>\n\n\n\n<li>Fold the soft picks into the raspberry cream.<\/li>\n\n\n\n<li>Pour the cream into the moulds and put back in the bridge for 30 minutes.<\/li>\n\n\n\n<li>Presentation. Take the moulds from the bridge, to unmould, put the moulds into hot water for a couple of seconds. Then with a sharp knife, make a cut on the base of the mould.
