{"id":1165,"date":"2023-02-18T18:44:35","date_gmt":"2023-02-18T18:44:35","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=1165"},"modified":"2023-02-18T19:25:11","modified_gmt":"2023-02-18T19:25:11","slug":"dundee-cake","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2023\/02\/18\/dundee-cake\/","title":{"rendered":"Dundee Cake"},"content":{"rendered":"\n<p>This is a typical Scottish cake and I learned today via an e-course.<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>180g softened butter<\/li>\n\n\n\n<li>90g caster sugar<\/li>\n\n\n\n<li>90g dark brown sugar<\/li>\n\n\n\n<li>115g plan flour<\/li>\n\n\n\n<li>110g self-raising flour<\/li>\n\n\n\n<li>1\/2 tsp baking powder<\/li>\n\n\n\n<li>300g dry mixed fruit<\/li>\n\n\n\n<li>1 tbsp of fresh grated ginger<\/li>\n\n\n\n<li>1 orange: juice + zest<\/li>\n\n\n\n<li>coconut flakes for decoration<\/li>\n\n\n\n<li>50ml Scotch whiskey (optional)<\/li>\n\n\n\n<li>1 tsp grated nutmeg<\/li>\n\n\n\n<li>1 tsp ground ginger<\/li>\n\n\n\n<li>2 tsp ground cinnamon<\/li>\n\n\n\n<li>optional: whiskey butter: 75g softened butter + 75g icing sugar + 1 tbsp whiskey<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pre-heat oven at 150C. Grease and line a baking tin 20x30cm aprox<\/li>\n\n\n\n<li>Soak the dried fruit with the whiskey, orange juice, orange zest and fresh grated ginger.<\/li>\n\n\n\n<li>In a bowl, cream the butter and sugar until light and fluffy<\/li>\n\n\n\n<li>Add the eggs one by one to the butter mix. Keep mixing<\/li>\n\n\n\n<li>Sift the flour, spices and baking powder on the butter mix. Fold everything with a wooden spoon or spatula.<\/li>\n\n\n\n<li>Drain the soaked fruit, reserve the liquid for later! Add the fruit into the dough, folding it.<\/li>\n\n\n\n<li>Pour the mixture into the tin and smooth the surface.<\/li>\n\n\n\n<li>Bake at 150C for 1h 20-30m aprox. Until golden and springy to touch.<\/li>\n\n\n\n<li>While baking, prepare the whiskey butter. Whip the butter and icing sugar. Add the tbsp of whiskey.
