{"id":1133,"date":"2023-01-19T21:28:21","date_gmt":"2023-01-19T21:28:21","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=1133"},"modified":"2023-01-19T21:28:21","modified_gmt":"2023-01-19T21:28:21","slug":"soda-bread-and-naan","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2023\/01\/19\/soda-bread-and-naan\/","title":{"rendered":"Soda Bread and Naan"},"content":{"rendered":"\n<p>Soda Bread Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>170g self raising flour<\/li>\n\n\n\n<li>170g plain flour<\/li>\n\n\n\n<li>1\/2 tsp salt<\/li>\n\n\n\n<li>1\/2 tsp bicarbonate of soda<\/li>\n\n\n\n<li>290ml (1\/2 pint) buttermilk<\/li>\n<\/ul>\n\n\n\n<p>Soda Bred Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pre-heat oven at 200C<\/li>\n\n\n\n<li>Mix the flours, salt and bicarbonate into a large bowl.<\/li>\n\n\n\n<li>Make a well in the center and pour the buttermilk, mixing with a fork to form a soft dough.<\/li>\n\n\n\n<li>Knead for 3-4 minutes in a lightly floured surface.<\/li>\n\n\n\n<li>Form a ball with the sides of your hands, flatten a bit the top.<\/li>\n\n\n\n<li>Cut the ball in 8 pieces with a big knife. Use a bit of oil so the knife doesn&#8217;t stick.<\/li>\n\n\n\n<li>Let is rest for 15 minutes. Prepare a tray lightly floured.<\/li>\n\n\n\n<li>Bake for 30 minutes. Check with a toothstick that comes out clean. And it should sound hollow when tapping the bottom.<\/li>\n\n\n\n<li>Cool in a wire rack.<\/li>\n<\/ul>\n\n\n\n<p>Ingredients for Peshwari Naan Bread:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3\/4 tsp instant yeast<\/li>\n\n\n\n<li>1\/2 tsp sugar<\/li>\n\n\n\n<li>60ml body temperature water<\/li>\n\n\n\n<li>140g plain flour<\/li>\n\n\n\n<li>1\/4 tsp salt<\/li>\n\n\n\n<li>60ml\/54g Greek style yogurt<\/li>\n\n\n\n<li>1\/2 tsp vegetable oil<\/li>\n<\/ul>\n\n\n\n<p>Naan Filling:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>28g butter <\/li>\n\n\n\n<li>1 tbsp desiccated coconut<\/li>\n\n\n\n<li>24g raisins<\/li>\n\n\n\n<li>22g almonds<\/li>\n<\/ul>\n\n\n\n<p>Naan Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mix yeast, sugar and water. Wait a 1-2 minutes until the liquid is a bit bubbly.<\/li>\n\n\n\n<li>Mix flour and salt in a bowl<\/li>\n\n\n\n<li>Add the water mix to the yogurt and oil.<\/li>\n\n\n\n<li>Add the yogurt mix to the flour. Mix well with a fork<\/li>\n\n\n\n<li>Knead for 5 minutes. It is going to be sticky. Add a bit extra flour if needed.<\/li>\n\n\n\n<li>Put the dough back in a lightly oiled bowl.<\/li>\n\n\n\n<li>Let is prove until double in size. 1h at least<\/li>\n\n\n\n<li>Prepare the filling. In a chopping board put all ingredients but butter. Chopped all them until they are fine.<\/li>\n\n\n\n<li>Add the butter, mix all ingredients and form 3 balls.<\/li>\n\n\n\n<li>Once the dough has risen. Divide in 3 parts.<\/li>\n\n\n\n<li>With a lightly floured rolling pin, roll each dough into a small circle, put a piece of butter in the middle. Wrap it with the rest of dough.<\/li>\n\n\n\n<li>Roll the dough ball with the pin trying to form an eye-drop. It should be quick, not many passes with the pin.<\/li>\n\n\n\n<li>Put the naans on a ligthly floured towel.<\/li>\n\n\n\n<li>Heat up a skillet. Once hot, (just a drop of oil), put a naan. Wait until puffs up and start to get brown dots in the bottom.<\/li>\n\n\n\n<li>Flip and wait for the same. Check it doesnt burn!
