And the filling is quite personal.<\/p>\n\n\n\n<p>Ingredients  for dough (x2 calzone)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>225g plain or strong white flour  + dusting<\/li>\n\n\n\n<li>90ml milk warmed at body temperature<\/li>\n\n\n\n<li>50ml water warmed at body temperature<\/li>\n\n\n\n<li>1 tsp dried yeast<\/li>\n\n\n\n<li>25ml olive oil<\/li>\n\n\n\n<li>pinch salt<\/li>\n<\/ul>\n\n\n\n<p>Filling:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>cherry tomatoes<\/li>\n\n\n\n<li>1 mozzarella roughly chopped<\/li>\n\n\n\n<li>any cold meat if you wish<\/li>\n\n\n\n<li>capers, oregano<\/li>\n\n\n\n<li>grated parmesan<\/li>\n\n\n\n<li>olive oil<\/li>\n\n\n\n<li>some slices of onion<\/li>\n\n\n\n<li>some tbsp of tomate sauce<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sift the flour and salt in a bowl.<\/li>\n\n\n\n<li>Warm the milk and water in a saucepan. Just body temperature! If too hot, will kill the yeast. Add the dry yest and mix.<\/li>\n\n\n\n<li>Add the milk mix to the flour, mix a bit and then add oil. Mix well.<\/li>\n\n\n\n<li>Knead until smooth and the window test passes.<\/li>\n\n\n\n<li>Let me it proof until double in size.<\/li>\n\n\n\n<li>Pre-heat oven at 250C.<\/li>\n\n\n\n<li>Mix all your filling ingredients in a bowl.<\/li>\n\n\n\n<li>Dive the dough in two, roll in a big circle around 23cm or so.<\/li>\n\n\n\n<li>Put the filling in the middle. Dont put too much so you need to &#8220;close&#8221; the dough.<\/li>\n\n\n\n<li>Brush the dough edges with water, then fold half the side over to cover the filling.<\/li>\n\n\n\n<li>Pinch the edges &#8220;covering your thumb&#8221;.<\/li>\n\n\n\n<li>White  a knife score the top of your calzone.<\/li>\n\n\n\n<li>Bake until dough is golden.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"451\" height=\"437\" src=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/01\/image-3.png\" alt=\"\" class=\"wp-image-1128\" srcset=\"https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/01\/image-3.png 451w, https:\/\/blog.thomarite.uk\/wp-content\/uploads\/2023\/01\/image-3-300x291.png 300w\" sizes=\"auto, (max-width: 451px) 85vw, 451px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>It looks like a big &#8220;empanada&#8221; but still was good.<\/p>\n\n\n\n<p>To be honest, I need to practice more my pizza dough.
