This is for a cicle tin of around 18cm diameter and at least 5cm high.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>110g sunflower oil<\/li>\n\n\n\n<li>170g dark brown sugar<\/li>\n\n\n\n<li>2 small eggs beaten<\/li>\n\n\n\n<li>170g plain flour<\/li>\n\n\n\n<li>5g baking powder<\/li>\n\n\n\n<li>2g cinnamon<\/li>\n\n\n\n<li>2 medium carrots grated<\/li>\n\n\n\n<li>42g raisins<\/li>\n\n\n\n<li>42 chopped walnuts<\/li>\n\n\n\n<li>pinch of salt<\/li>\n\n\n\n<li>a bit of melted butter<\/li>\n\n\n\n<li>optional: 1 bottle cap of (dark) rum.<\/li>\n<\/ul>\n\n\n\n<p>Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pre-heat oven at 170C<\/li>\n\n\n\n<li>Using the circle tin, use to cut a cicle with baking paper to cover the bottom of the tin.<\/li>\n\n\n\n<li>Butter the bottom and side of the tin. Put the paper and butter a bit again.<\/li>\n\n\n\n<li>Dust a bit of flour on the bottom of the tin. Smack it a bit to produce an anti-stick layer.<\/li>\n\n\n\n<li>Mix oil and sugar in a bowl. Then add the beaten eggs.<\/li>\n\n\n\n<li>In another bowl, mix carrots, raisins and rum (optional).<\/li>\n\n\n\n<li>In another bowl, sift (<strong>twice!<\/strong>) the flour, baking powder, cinnamon and salt.<\/li>\n\n\n\n<li>And the flour to the wet mix. Whisk until smooth.<\/li>\n\n\n\n<li>Add carrot mix, mix properly.<\/li>\n\n\n\n<li>Add walnuts, fold it!<\/li>\n\n\n\n<li>Pour the mix into the tin and take to the oven.<\/li>\n\n\n\n<li>Bake for 1h or so. Use a tooth stick to check the cake is baked. It should come out clean.<\/li>\n\n\n\n<li>Let is cool down in a racket.<\/li>\n<\/ul>\n\n\n\n<p>Cream Cheese Frosting Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>150g philadelpia cream cheese (be sure it is consistent! &#8211; full fat!)<\/li>\n\n\n\n<li>25g icing sugar sifted<\/li>\n\n\n\n<li>12g softed butter<\/li>\n\n\n\n<li>1\/4 tsp of lemon juice<\/li>\n\n\n\n<li>A couple of drops of vanilla paste.<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mix cheese and sugar. Whisking<\/li>\n\n\n\n<li>Add butter. Keep whisking<\/li>\n\n\n\n<li>Add vanilla<\/li>\n\n\n\n<li>Add lemon juice.<\/li>\n\n\n\n<li>It should be a consistent mix. You dont the frosting to melt down once spread on your cake.<\/li>\n<\/ul>\n\n\n\n<p>Finishing Cake:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Remove the cake from the tin. It should be cool down enough.<\/li>\n\n\n\n<li>In a plate, leave the flat part on top so it is easier to put the cream.<\/li>\n\n\n\n<li>With a palette, create a flat surface with the cream. You can use a pipping bag and a rotating dish to help you with the process.<\/li>\n\n\n\n<li>Make eight dollops for decoration.<\/li>\n<\/ul>\n\n\n\n<p>Optional: Marzipan Carrots<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>50g of marzipan (store bought)<\/li>\n\n\n\n<li>Orange, blue and yellow colorants.<\/li>\n<\/ul>\n\n\n\n<p>Process:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In a small container, mix a couple of drops of yellow and blue colorant to make a green color.<\/li>\n\n\n\n<li>Take 30g of marzipan and put a couple of drops of orange. Use latex gloves! Mix both until you have a orange ball.<\/li>\n\n\n\n<li>Do the same with a 15g aprox marzipan portion and green.<\/li>\n\n\n\n<li>To create small carrots, take a small ball of orange, with the edge of you palm, try to create the body of the carrot. <\/li>\n\n\n\n<li>With the bland edge of knife make circle of the carrot body.<\/li>\n\n\n\n<li>With a tooth stick make a hole in the top to add later the green tail.<\/li>\n\n\n\n<li>Take a tiny ball of green marzipan. Again with the edge of your palms make a small tail, cut 3\/4 with the knife to simulate the carrot leaves. With the tooth stick help to introduce the tip into the carrot.<\/li>\n\n\n\n<li>Repeat with the rest.<\/li>\n\n\n\n<li>Once you have eight.
