{"id":1074,"date":"2022-11-25T11:45:59","date_gmt":"2022-11-25T11:45:59","guid":{"rendered":"https:\/\/blog.thomarite.uk\/?p=1074"},"modified":"2022-11-25T11:45:59","modified_gmt":"2022-11-25T11:45:59","slug":"blueberry-muffins","status":"publish","type":"post","link":"https:\/\/blog.thomarite.uk\/index.php\/2022\/11\/25\/blueberry-muffins\/","title":{"rendered":"Blueberry Muffins"},"content":{"rendered":"\n<p>This makes approx 6 muffins.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>110g plain flour<\/li>\n\n\n\n<li>110g butter<\/li>\n\n\n\n<li>65g caster sugar<\/li>\n\n\n\n<li>2 free-range eggs mixed<\/li>\n\n\n\n<li>1 1\/2 tsp baking powder<\/li>\n\n\n\n<li>100g blueberries (fresh or frozen)<\/li>\n\n\n\n<li>pinch of nutmeg<\/li>\n\n\n\n<li>Muffin cases<\/li>\n<\/ul>\n\n\n\n<p>Process<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pre-heat oven at 200C<\/li>\n\n\n\n<li>Cream the butter and sugar. It should double in size and it should look like a cream. You shouldnt feel the sugar granes. This is slow and a bit painful \ud83d\ude1b<\/li>\n\n\n\n<li>Slowly, add 1\/4 of egg to the cream, mix until all combined. Add another 1\/4 of egg, mix until all combined. Repeat until all egg is in.<\/li>\n\n\n\n<li>Add the flour, baking powder and nutmeg. Mix all well.<\/li>\n\n\n\n<li>Cover the mix and let it rest for 10 minutes.<\/li>\n\n\n\n<li>Prepare two cases per muffin if you dont have special muffin tray.<\/li>\n\n\n\n<li>Take a piping bag, you dont need any special head. Put the mix into the bag. Cut the tip of the bag, it should be 1.5cm max diameter.<\/li>\n\n\n\n<li>Pipe the mix <strong>vertically<\/strong>! (very important) on the bottom of the cases. Fill a bit less than half the case.<\/li>\n\n\n\n<li>Add blueberries on top of each dollop of mix. 5-6 blueberries.<\/li>\n\n\n\n<li>Then add another layer of mix on top of the blueberries. Remember to pipe vertically!. Fill until the top of the case.
